The Sazerac

The Sazerac is a variation on the Old Fashioned.

Preparation:

Put ice in an old-fashioned glass and fill with cold water. Let it sit (3-5 minutes) to chill the glass. Add just enough absinthe to coat the inside of the glass; slowly turn the glass while holding it at an angle. Discard (or drink) any excess.

Ingredients:

Bourbon

Absinthe

Sugar cube or sugar substitute

Peychaud’s bitters (not so easy to find)

Angostura bitters

Mixing the drink:

Put the sugar in a martini mixer, add 2 drops of each type of bitters, and add a few drops of water. Stir until the sugar dissolves.

Fill the martini shaker with ice cubes

Add 2 shots of bourbon.

Stir about 15 times (do not shake)

Strain into the old-fashioned glass.

The Bear does not use garnishes, but will use a luxardo cherry if available. Some prefer a twist of lemon.
