Super Bowl 2005 Chili

Ingredients:
2 28-oz cans tomato sauce
1 large green bell pepper
1 mild green chile (can use jalapeno for more spice)
1 large yellow onion
3 cloves garlic
Salt to taste (about 1 tsp)
1 tsp black pepper
1/2 tsp cayenne pepper
1 4.5-oz can chopped green chili peppers
2 28-oz cans diced tomatoes
1/4 cup salsa verde (hot)
3 cups beef broth
1/2 cup chili powder (can add more if you like it spicier)
2 tsp oregano
2 tsp cilantro
1 tsp cumin
1 tsp fennel seeds
2 tsp sugar
3 lbs beef (eye round, top round, or stew beef – you can use ground beef instead)
4 tbsp flour
1 16-oz can black beans (or kidney or pinto beans; may want to add another can)
1 bottle/can beer
Directions:
Heat tomato sauce in a large pot or crock pot on low. Finely chop green pepper and onion. Sauté green pepper until nearly done, then add the onion, salt, and pepper. When both are about done, add the garlic and the can of green chili peppers. Add the diced tomatoes to the mix and cook about 5 minutes, continuing to chop up any large chunks of tomato. Add the mix to the tomato sauce. Add the salsa, beef broth, chili powder, oregano, cilantro, cumin, fennel, and sugar. Simmer on low.
Cut beef into small cubes (1/4”), coat in flour, and fry in oil until slightly browned, then add to mixture. Add the beans. Salt to taste. Simmer on low for 4 hours. Add beer 30 minutes before done.
